Mocha Sponge Cake recipe

Mocha is a delicious drink that combines the flavours of chocolate and coffee and this cake optimises those wonderful flavours. Its really simple, too. Try picking up on the mocha flavours by decorating the cake with coffee icing and some chocolate covered coffee beans.

Ingredients:

  • 175g butter
  • 175g caster sugar
  • 150g plain flour
  • 25g cocoa powder
  • 1 tbsp. water mixed with 2 tsp. coffee
  • 3 eggs
  • 75g icing sugar
  • 50g butter
  • 1 tbsp. cocoa powder
  • 1 tsp. coffee dissolved in 1 tsp. water

Method of Preparation:

  1. Preheat the oven to 180C and grease and line two 18cm cake tins.

  2. Cream together the caster sugar and the butter until pale and fluffy. Beat in the eggs, one at a time, and then stir in the dissolved coffee.

  3. Sieve in the flour and the cocoa powder and combine until you have a smooth cake batter.

  4. Divide the batter between the two cake tins and put into the preheated oven for around 25 minutes until firm.

  5. Leave the cakes to cool completely before making the buttercream filling.

  6. Beat the butter until it almost turns white. Add the cocoa powder and coffee and mix well, then beat in the icing sugar.

  7. Spread the filling on top of one of the cakes, then invert the other cake and place that on top of the iced cake.

  8. If there is any icing left over, spread it over the top of the cake.

To make this cake even more special, try sprinkling it with a mixture of cocoa powder and coffee granules and drizzle it with a little bit of melted chocolate once its cold. It will serve eight people.
