Pear and Chocolate Sponge recipe

Pear and chocolate are a culinary match made in heaven and this particular sponge brings together tinned pears with creamy chocolate buttercream and cocoa powder to make a rich, decadent sponge cake. Serve it with lashings of whipped cream or a good vanilla ice cream for a fabulous dinner party dessert.

Ingredients:

  • 175g butter
  • 175g caster sugar
  • 150g plain flour
  • 25g cocoa powder
  • 3 eggs
  • 250g icing sugar
  • 250g butter
  • 30g cocoa powder
  • 1 tbsp. boiling water
  • 1 tsp. vanilla extract
  • 60g chopped walnuts
  • 6 tinned pear halves

Method of Preparation:

  1. Preheat the oven to 190C and grease and line two 20cm round cake tins.

  2. Beat together the 175g of butter and caster sugar until pale and fluffy. Add in the eggs one at a time, beating well after each addition, and then sieve in the flour and cocoa powder. Mix well and once smooth, divide between the two cake tins and place into the oven for 25-30 minutes. Leave them to cool before icing them.

  3. Once the cakes are cool, start the icing. Mix together the 250g icing sugar and 250g butter until light and fluffy, around 5 minutes. Dissolve the cocoa powder in enough hot water to completely dissolve it and add this to the butter and sugar mixture along with the vanilla. Beat for another minutes or so until smooth.

  4. To assemble the cake, split the two cakes in half horizontally. Spread the icing over the top of three of the cake halves, leaving one without icing. Stack the cakes, sandwiching the bottom of one cake half to the top of one iced cake half, ending with the cake half that hasnt been iced on the top.

  5. Spread the remaining icing around the sides and the top of the stacked cake.

  6. Arrange the pear halves on top of the cake and sprinkle with the chopped walnuts.

If you want to make the cake extra flavourful, try adding 100g of chopped walnuts to the initial cake batter. This cake should yield around 10 portions, making it perfect for all the family.
